Stuffed Onions for the Campfire

  • 4 large yellow onions

  • 1 zucchini, diced

  • 1 carrot, diced

  • 1 tsp red curry powder

  • 1/4 tsp ginger powder

  • 1/4 tsp turmeric 

  • 1/2 tsp cinnamon

  • 1 tbsp olive oil

  • Salt to taste


  1. Carve out the center of 4 large yellow onions. Use a knife to score an 'X' into the center and scoop out layers with a spoon, being careful to leave the base intact.

  2. Chop onion centers and mix with chopped zucchini, carrot, olive oil, and spices in a large bowl. Spoon mixture into the center of each onion.

  3. Wrap onions onions in tinfoil. You can also combine leftover vegetable mix with chopped kale in separate tinfoil packets for more campfire snacks.

  4. Nestle onions on hot coals, keeping them upright. With a small shovel, top each onion with 1-2 hot coals and cook for ~30 minutes. Remove from coals, carefully open the foil, and serve.
